While pan searing some salmon fillets with cilantro mint pesto I needed to whip up a side salad quickly and seeing some beautiful nectarines on the counter this salad basically made itself. It paired super well with the salmon, and a glass of Pinos Gris, although optional, is highly recommended ;)

INGREDIENTS
- Mixed greens
- Nectarine
- Feta or Goat Cheese
- Pepitas (pumpkin seeds)
- Fresh cracked salt and black pepper
DRESSING
1 TBS EVOO
1 TBS BALSAMIC
1 TSP HONEY
1 TSP UME VINEGAR (totally optional but I like the added umami)
SALT TO TASTE (taste first if using the ume vinegar it's quite salty)
1) Assemble Salad
2) Mix dressing
3) Toss and enjoy!
