After making my mint pesto the other day for a salmon dish, I had big ideas about using it as a salad dressing so here it is! Is it as yummy as I hoped? Heck ya! The minty acidic dressing seems to just compliment the heavier ingredients so nicely, as do the cucumbers and the cherry tomatoes. But this is still one filling salad - loaded with fiber, protein, and tons of good fats. ENJOY :)

SALAD INGREDIENTS
- 3/4 cup of chickpeas (About half a big can)
- 1 cup of cherry or grape tomatoes (cut in half)
- 1/2 avocado cubed
- 1 mini cucumber sliced
- 1 tbsp feta in brine crumbled
- 1 tbsp finely chopped red onion
- small mint leaves for garnish
- fresh cracked salt and pepper
DRESS WITH CILANTRO MINT PESTO
INSTRUCTIONS
mix tomatoes, cucumber, avocado and chickpeas in a bowl, toss with mint pesto dressing and top with red onion, feta crumble, and mint leaves
