Lemongrass Turmuric Detox Chicken Ramen (Keto)

This is a soup I should be eating everyday but it’s a must have for days I’m feeling sluggish, crampy, bloated, sick, or just haven’t been eating or treating my body well. It’s loaded with turmeric, lemongrass, ginger, and garlic which have incredible anti-inflammatory and antioxidant properties as well as a million other benefits: Turmeric is a pain reliever and mood elevator (great for PMS), ginger is a natural antacid and expectorant, lemongrass is said to reduce fever and garlic has powerful anti-viral properties, to just name a few. These very powerful ingredients combined with shirataki noodles which are 0 calorie, keto, and full of fiber (so they get things moving 😅) , will reset your whole body so you can be your best and rock at life! Oh did I mention that it’s freakin’ delicious too?

INGREDIENTS - Makes 3-4 servings

  • 6 chicken thighs or chicken carcass (free range for best karma and health benefits ❤️)

  • 2 stalks lemongrass - bruised (smash with back of knife to release oils) and cut in half

  • 2” knob of ginger peeled and cut into slices

  • 3 cloves of garlic finely chopped

  • 1/2 tbsp ground turmeric

  • optional 1 tbsp chicken bouillon (if stronger broth is desired

  • Sea salt or fish sauce to taste

  • about 8 cups of water or enough to keep chicken submerged throughout cooking

  • 2 tbs cooking oil

  • 2 - 4 cage free eggs room temperature

  • 2 packs of shirataki noodles

  • 1 cup shredded cabbage

  • 1 lemon sliced in wedges

  • cilantro and green onion chopped

  • fresh chilies - optional



DIRECTIONS

  1. Heat oil in a large pot on medium heat. Add ginger and garlic and fry until golden.

  2. Add chicken pieces, browning them slightly on both sides seals in juices but is not necessary.

  3. add water to pot bring to a boil, skim the scum and oil from the surface and reduce heat to a simmer. Add lemongrass stalks.

  4. Now you can go watch TV. I always say soup is ready when it “becomes soup” but it will probably take about 45 mins. Chicken will start falling off the bone, the broth will reduce and develop colour and become a bit more viscous. At this point you can remove the chicken and lemongrass and set the chicken aside to cool.

  5. Add turmeric and salt or fish sauce to taste. You can add some chicken bouillon if the flavour is not strong enough.

  6. Add whole eggs, they will take about 12 minutes. During this time you can chop the cabbage, herbs, chilies and when cool enough to handle remove the chicken meat from the bones.

  7. Add rinsed and strained shirataki noodles to pot - these cook fast only a couple minutes so just add the amount you are serving. They do not expand.

  8. Remove eggs peel and slice in half, distribute noodles amongst bowls. Top with cabbage, chicken meat, egg, herbs and lemon wedges.

  9. Pour hot soup over top, serve immediately with fish sauce, chili, and extra lemon wedges on the side and prepare to feel amazing!!!!
